Instant Pot Cheesy Potatoes Recipe

This Instant Pot Cheesy Potatoes recipe makes the perfect side dish for busy nights. It’s super quick and easy to make, plus it tastes delicious.

It goes well with lots of main dishes, too, so add it to your weekly meal planner!

Due to how much I love my Crock Pot Cheesy Potatoes recipe and how popular it’s been with our readers, I thought it was time for an Instant Pot version.

Cheesy Potatoes Instant Pot Side Dish

It’s no secret how much I love potatoes. Baked, grilled, fried… They are so good on the side, but taste pretty darn great on their own.

While I still use my slow cooker, I really do love the ease of cooking with my Instant Pot. You can easily cook these cheesy potatoes up in about 5 minutes (plus time to come to pressure).

Now that’s fast. Definitely faster than roasting potatoes in the oven.

Ingredients for Instant Pot Cheesy Potatoes:

  • 20-25 mini yellow potatoes
  • 1 cup water
  • Salt and pepper to taste
  • 1 ½ cup shredded cheddar jack cheese
  • Chives for garnishing

This recipe yields about 4 servings as a side dish.

How to Make Cheesy Potatoes in an Instant Pot Pressure Cooker

Start by washing and scrubbing the potatoes. Peeling is optional. I do not peel mine, but you may peel the potatoes if you wish. Then cut each one in half.

Next add one cup of water into the inner pot of Instant Pot, followed by the potato halves.

Season with salt and pepper.

Secure the Instant Pot lid and set on 4 minutes manual high pressure. Once time is up, allow for a quick pressure release (QPR).

Drain the water and place potatoes on a serving platter. Sprinkle with shredded cheddar jack cheese.

Chop chives and garnish. Serve and enjoy!

Serving Suggestions:

  • These cheesy potatoes can be served along side almost any dinner recipe, such as meatloaf, pork chops, or our Honey Garlic Chicken.
  • I love bacon with baked potatoes. Add a cup or more of cooked bacon pieces before serving.
  • Cheesy ranch potatoes are also delicious! Try sprinkling with dry ranch seasoning mix.
  • Another side dish this tastes great with is Parmesan Garlic Butter Corn.
