One Pot Cajun Chicken Pasta Recipe
I am always a fan of a one pot dish, and if it is a pasta dish, it's even better. The all in one pasta dishes are always going to make me happy since I can avoid multiple items in the kitchen needing cleanup. On top of that, I can easily serve this up in a bowl without having to worry about multiple serving dishes, spoons, plates, and other utensils. While this is a Cajun dish, the cheese makes it much less spicy so you can enjoy it without worrying about the kids not being a fan of the spice.
8 oz Spaghetti
1 Boneless chicken breast, sliced
1 tsp garlic powder
½ Tbsp onion powder
½ tsp ground ginger
1 Tbsp olive oil
1½ Tbsps Cajun seasoning
½ Cup mozzarella cheese
½ Cup Parmesan cheese
1 Cup tomatoes diced
½ Cup heavy cream
A dash of salt
In a pot over medium-high heat, cook the chicken breast with olive oil, Cajun seasoning, onion powder, garlic powder, and ground ginger.
Cook each side of the chicken for 3-4 minutes.
Remove the chicken from the pot and boil water in the same pot.
Add salt and the spaghetti to the pot.
Cook the pasta following the packaging instructions.
Carefully drain the water and add the chicken.
Mix together with the heavy cream, Parmesan cheese, and half cup tomatoes.
Serve on dinner plates or in bowls and top with the remaining tomatoes and mozzarella cheese.

This Cajun chicken pasta recipe is a great option that can easily be adjusted to your own spice preference. We use Cajun seasoning in this recipe, but you can also add in chilies or any of your favorite hot peppers. For kids, you can leave the seasoning out of part of the dish to serve them a mild cheese and chicken pasta instead.
I love meal planning for my family. Being a work at home mom, most people think it should be easy for me to cook full meals every night. The truth is, it's even harder. My work never truly ends as I work for myself, so this job is not a 9-5 job I can always turn off easily at the end of a work day. That makes easy meals like this Cajun chicken pasta recipe a favorite for keeping ingredients on hand to create. It requires so little work and everyone loves it!
