When most people think of Wisconsin they think of cheese, beer and brats. While those are part of our state’s culture, there’s even more to us than that! Wisconsin also produces a lot of cranberries and potatoes. Speaking of potatoes, there are four McCain Foods manufacturing plants in Wisconsin – that’s more than any other state in the United States! (I actually thought McCain’s was a local business but learned it was founded in Canada.) Where I grew up, there are a lot of potato farms in the area and several of my family members have worked at one or more of them. I can’t tell you how many years my grandmother worked sorting potatoes!
So with my family working “in potatoes” (as we would say) and being part Irish, I have quite the appetite for this starchy vegetable. Seriously, I love potatoes and many of it’s forms… tater tots, french fries, spiral fries, mashed, baked, scalloped, hashbrowns… Not sure I’ve ever met a potato I didn’t like except maybe a raw one. While fresh is ideal, frozen is acceptable and found in my freezer any day of the week.

Since we do use frozen taters a lot, I’m glad to know that McCain’s strives to use real ingredients and pays attention to growing health concerns. Since 1999 McCain Foods has not used genetically modified potatoes (GMOs) and they continue to reformulate their products. This makes me more confident in serving their products to my family.
Their products taste good and are convenient. I’d love to use fresh potatoes more often, but I just don’t have the time to wash, peel, and cut them plus cooking time. It’s much easier to pop them in the oven (since we try not to deep fry too often) while the main dish is cooking. I haven’t tried them in recipes other than tater tot casserole, but I might have to start experimenting a bit more…
